- 3 tblsp chopped fresh sage leaves
- 1/4 c fresh lemon juice
- 2 tsp grated lemon zest
- 1/2 shallot coarsely chopped
- 1 tsp honey
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1/3 cup olive oil
- combine sage, lemon juice, zest, shallot, honey, salt, and pepper in a blender or food processor and blend until smooth.
- with motor running slowly drizzle in the oil and blend until emulsified.
notes – i don’t follow this recipe closely and it always comes out well. i personally like to skip the honey and add more lemon because i love lemon. you can’t really go wrong. i have also forgotten to hold out the oil and blended it all together and it was still good. i make a lot of this by feel, no measuring, and keep it for salad dressing etc over a day or two.
