sage lemon vinaigrette

  • 3 tblsp chopped fresh sage leaves
  • 1/4 c fresh lemon juice
  • 2 tsp grated lemon zest
  • 1/2 shallot coarsely chopped
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/3 cup olive oil

 

  1. combine sage, lemon juice, zest, shallot, honey, salt, and pepper in a blender or food processor and blend until smooth.
  2. with motor running slowly drizzle in the oil and blend until emulsified.

 

notes – i don’t follow this recipe closely and it always comes out well.  i personally like to skip the honey and add more lemon because i love lemon.  you can’t really go wrong.  i have also forgotten to hold out the oil and blended it all together and it was still good.  i make a lot of this by feel, no measuring, and keep it for salad dressing etc over a day or two.
